What an unexpected surprise this recipe turned out to be, uncovered from the depths of a pile of magazine clippings that have been saved over the years. While cleaning out the ever growing collection of recipes to ‘try someday’, we discovered this gem from the November 2013 issue of Southern Living.
The original recipe comes from the kitchen of Marina Delio of yummymummykitchen.com. They can be prepared a couple days in advance of when you wish to serve them and she suggests serving them with baked brie or as garnish for cakes or pies. Quite frankly, we found they look quite lovely in a pretty candy dish and taste delicious on their own.
For this recipe you’ll need:
1 cup pure maple syrup
2 cups fresh cranberries
1 cup sugar (we used a half cup of maple sugar and a half cup regular sugar)
How to make Sparkling Cranberries:
Cook 1 cup pure maple syrup in a saucepan over medium-low heat 1 to 2 minutes. Don’t let syrup get too hot or cranberries will pop.
Remove from heat and stir in 2 cups of fresh cranberries.
Cover and chill 8 to 12 hours.
Mix 1/2 cup maple sugar and 1/2 cup regular sugar in a large bowl or baking dish.
Drain cranberries in a colander for about 15 minutes.
Add a handful of cranberries at a time to the sugar mixture and gently toss them to coat. Repeat with the remaining cranberries.
Place the cranberries in a single layer on a parchment paper-lined baking sheet and let stand until completely dry.
That’s it! The result is a beautiful batch of sparkling candied fresh cranberries that provide a perfectly balanced burst of sweet-tart tastes that are sure to complement any holiday spread.
